Mattone is a Taleggio-style, Jersey cow’s milk cheese that is brick-shaped. The rosy exterior is normally dotted with grey and green mold and the interior is a pale straw color. Very creamy with a musty sweet and salty tang. Pairs with farmhouse ales, Pinot Noir, risotto, polenta, tomatoes, and salad greens. From Evergreen Lane Farm & Creamery.
